Come with us on a smokin journey across the Southern States of America to discover the recipes of some of the world's most famous pitmasters. No need to jump on a plane - we are bringing the tastes and smells to you.

Eat & Learn
Inspired by Pitmasters from across the Southern USA we are hosting a summer series of pop-up eat and learn events at our HQ on the beautiful Cooley Peninsula.
Each event is on a Wednesday from 7.00pm to 9.30pm.
Each event features a variety of dishes from the menu of the BBQ joint most associated with the pitmaster. The evening is finished with a home-made traditional decadent cake native to the state we have visited. There will be as much soft drinks and tea and coffee as you can manage. We will also be sampling some complimentary GNL liquor for the non-drivers.
We promise you will eat magnificently so come very hungry. All the meat will be specialist, organic, or heritage breed and all the other ingredients will be locally sourced from small producers artisan where possible.

FAQs
It's mostly just like minded people cooking some BBQ and having some craic. You are paying for amazing and expensive food that you will remember eating. Leave your expectations at home and try and bring something to the event. But that doesn't mean we are winging it - here is what you can expect.

Food
Premium heritage breed meat, local sea food, local honey, artisan breads, organic chicken and eggs, and as much fresh brewed coffee as you can handle. You will want for nothing and it will all taste superb,

Venue
We have an large open shed for cooking in if it gets wet, a more sheltered large barn for eating in if it gets very wet, and loads of open space if it stays dry. We will have a portaloo on site as well as ample parking. Kids and dogs are welcome as long as both are kept on a lead.

People
Laura has trained in Ballymaloe, Dublin Bakery School, and Dublin Cookery School. She owns at least 150 cook books. Ruairi has trained on YouTube and has probably put in about 5 billion hours by now. He is obsessed with meat and butchers hide when they see him coming.

Equipment
We have shed loads of it. Weber kettles, open fire pits, camp fire stoves, cast iron, wrought iron, wood charcoal, etc. We have also ordered a custom built offset smoker - fingers crossed it will be ready.
